Recipe: Vegetarian Chickpeas and Cauliflower Korma

  • 15 oz can chickpeas, drained and patted dry
  • 5 oz package Tasty Bite Korma Spice & Simmer Kit
  • 1 tablespoon olive oil
  • 1 cups cauliflower florets (fresh or frozen)
  • 1 – 2 9 oz packages Tasty Bite Garlic Brown Rice
  • 1/4 cup frozen peas or edamame (optional, for color)

Directions:

  1. Place the chickpeas in a small, shallow container and add the marinade from the Tasty Bite Korma Spice & Simmer Kit. Stir until the chickpeas are coated. Set aside for 10 – 15 minutes.
  2. Pour 1 tablespoon olive oil in a large skillet over medium high heat and add the whole spices from the Spice & Simmer kit. Cook and stir the whole spices in the oil for about 30 seconds.
  3. Reduce heat to medium and add the cauliflower florets. Stir until they’re coated with the oil. Cover and cook for about 5-10 minutes, until the cauliflower is tender.
  4. Add the chickpeas with the marinade. Add the frozen peas or edamame. Stir to combine.
  5. Pour the Spice & Simmer Sauce Packet over the cauliflower and chickpeas. Stir to combine.
  6. Follow the package instructions to heat up the Tasty Bite Garlic Brown Rice.
  7. Place some of the heated rice on a plate or bowl. Top with the Vegetarian Chickpeas and Cauliflower Korma.
