What are Zoodles?

Zoodles are basically zucchinis cut into thin noodle-like strips and cooked until tender. You’ll be surprised at the delicious flavor they offer, and the nutritional boost they add to your favorite recipes!

You can buy a spiralizing tool in the kitchenware department at your local stores or you can find them online as well. They range from $10 – $50. Alternatively you can create long, thin slices of the zucchini with a knife. Simply cut the zucchini in half lengthwise. Then continue creating addition slices, lengthwise. Then stack those pieces and cut long slices.

Recipe: Easy Green Curry Zoodles Recipe

  • 14 oz package extra firm tofu, rinsed and pressed
  • 5 oz package Tasty Bite Thai Green Curry Spice & Simmer
  • 2 medium zucchinis (long, thin ones work best)
  • 1 1/2 tablespoons olive oil, divided
  • 1 cup cherry tomatoes

Directions:

  1. Cut the tofu into small cubes and place in a lidded container. Add the Tasty Bite Green Curry Marinade Packet and gently stir until the tofu is coated. Set aside for 20 minutes.
  2. In the meantime, spiralize the zucchini by using a tool or by cutting the zucchini into long, thin strips.
  3. Pour 1/2 tablespoon olive oil in a large skillet over medium heat. Add the zucchini and cook for a few minutes, until tender. Remove from the skillet. Set aside.
  4. Turn heat up to medium high and add the remaining oil and the whole spices from the Spice & Simmer kit. Cook and stir the whole spices in the oil for about 30 seconds.
  5. Add the marinated tofu to the spicy oil and cook until the tofu is slightly browned, about 10 minutes. Add the tomatoes and cook until 5 minutes, until the tomatoes are tender. Gently press on the tomatoes with a spatula to make them burst.
  6. Top with the Simmer Packet from the Spice & Simmer Kit. Stir until the sauce is incorporated throughout.
  7. Serve by placing the cooked zucchini noodles on a plate, top with the tofu mixture.
  8. Store any leftovers in an airtight container in the fridge.
