Do you ever feel like you don’t have the time to pack a healthy lunch?  So many of us are busy these days and between work, school, and after school activities, planning a nutritious lunch can often fall by the wayside.  That’s usually when we end up hitting the vending machine at the office or ordering take out.  Those may be fast options but they’re usually not the healthiest ones.

Fortunately, Tasty Bite® makes it easy to have a quick and healthy lunch, even on those busy weekdays.  Tasty Bite® Indian Entrées are slow-cooked and full of complex flavors and spices.  And they come in convenient packaging that can be heated up in the microwave in just 60 seconds. Plus, Tasty Bite® products are all vegetarian and have no artificial flavors, additives or preservatives, so it’s a meal that you can feel good about eating.

You can enjoy Tasty Bite® entrees on their own or served on a bed of rice, but another great way to eat them is in a Naan Pocket Sandwich.  Naan is an Indian flatbread that’s traditionally made with ingredients like buttermilk and ghee and  cooked in a tandoor oven.  You can find naan in many grocery stores nowadays in the bread aisle.

To make these Naan Pocket Sandwiches, simply heat up your favorite Tasty Bite® Indian entrée and spoon it on top of a piece of naan.  I used the Jaipur Vegetables, which contains a delicious medley of vegetables, paneer cheese, cashews and raisins. Since each Tasty Bite® package actually has two servings, you can even make a second sandwich to save for the next day.  Then, pile on the toppings!  I like to add plenty of colorful vegetables like shredded lettuce, sweet tomatoes, and slices of crunchy red onion.

For a final touch, I like to drizzle on some of my cooling homemade raita.  Raita is a yogurt-based sauce made with yogurt, herbs and cumin.  It’s the perfect compliment to the rich, savory Jaipur Vegetables.

Once all of your toppings are on, fold the naan over, forming a pocket, and devour!

You can prep all of the ingredients the night before and pack it in your lunch bag so that the next day, all you have to do is heat up the entrée and assemble the sandwich.  Gourmet food with great taste, convenience and value- it doesn’t get much better than that!  Just one warning- you may want to pack some extra sandwiches because your coworkers will definitely want to try some!

 

Tasty Bite® Naan Pocket Sandwiches

Tasty Bite Jaipur Vegetables Pocket Naan Recipe

Makes 2 sandwiches

Ingredients:

Sandwiches:

  • 1 package Tasty Bite® Jaipur Vegetables or other entrée
  • 2 pieces store-bought naan

Raita:

  • ½ cup plain yogurt
  • 1 tablespoon chopped cilantro or mint
  • ¼ teaspoon ground cumin
  • Pinch of salt

Optional Toppings: shredded lettuce, tomato slices, red onion slices, cilantro or mint leaves

 

Directions:

  1. To make the raita, mix the yogurt, cilantro, cumin and salt together in a bowl.
  2. Heat the Tasty Bite® Jaipur Vegetables according to package directions.
  3. Heat the naan in the microwave for a few seconds until warm.  Top each piece of naan with some shredded lettuce and tomato slices.  Spoon the Jaipur Vegetables on top.  Top with raita, onion and cilantro or mint.  Fold in half and enjoy!
