Recipe: Szechuan Chickpea Soft Tacos

 

  • 2 cups Shredded Purple Cabbage
  • 1/4 Finely Chopped Diced Onions
  • 1/4 cup Shredded Carrots
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Agave Nectar, Maple Syrup, or Honey
  • 1 – 2 fresh cilantro leaves (or fresh parsley leaves), chopped
  • 1 teaspoon Olive Oil
  • 1 package Tasty Bite® Szechuan Spice & Simmer
  • 15 oz Can Chickpeas, drained
  • 1/2 package of Tasty Bite® Brown Rice
  • 6 Corn Tortillas
  • Garnish with additional cilantro leaves and sour cream

 

  1. Combine the shredded cabbage, diced onions, and shredded carrots in a bowl. Add the lime juice and syrup sweetener and stir to combine. Top with chopped cilantro. Cover and refrigerate.
  2. Heat your oven to 375F. Line a baking pan with aluminum foil.
  3. In a skillet add the olive oil over medium heat. Once it’s heated, add the seasonings from the Tasty Bite® Spice & Simmer kit. Cook over medium heat for about 30 seconds. Then add the drained chickpeas. Stir to coat and cook for another 30 seconds.
  4. Add the marinade packet to the skillet and stir until the chickpeas are coated and the marinade thickens.
  5. Pour the chickpeas onto your prepared pan, in one pile. Then add the Spice & Simmer Sauce packet. Stir to coat the chickpeas and then spread them out in a single layer across the pan. Bake for 30 minutes.
  6. Once the chickpeas are done, remove from oven and allow them to cool slightly.
  7. Spoon some brown rice onto the center of each corn tortilla, followed by the Spicy Chickpeas. Top each soft taco with the Slaw Mix.
  8. Garnish each soft taco with a dollop of sour cream and additional cilantro if you’d like.
