Bombay Potato Pancakes

Ingredients

  • 1 package Bombay Potatoes
  • 1 potato
  • 2 tbsp. grated carrots
  • 2 tbsp. corn
  • 2 tbsp. coriander
  • olive oil
  • panko breadcrumbs

Steps


  1. Empty Tasty Bite Bombay Potatoes into a colander and drain excess fluid
  2. Cook potato in microwave, peel, and add to Bombay Potatoes
  3. Mash and mix the Bombay Potatoes. Then mix carrots, corn, and coriander
  4. Roll mixture into pancake patties and fry over medium heat for 7 minutes or until outside is crisp.
  5. Serve warm
