Mushroom Lo Mein Scallion Pancake

Ingredients

  • 2 packages Mushroom Lo Mein
  • 3 beaten eggs
  • 4 sliced Cremini mushrooms
  • 1 bunch of chopped scallions
  • olive oil
  • Dipping sauce:
  • 1/3 cup soy sauce
  • 1/3 cup rice wine vinegar
  • 1 tbsp. sesame oil
  • 1 tbsp. chili pepper flakes
  • 1 tbsp. chopped scallion
  • 1 tsp. chopped garlic (Whisk all ingredients together for dipping sauce)

Steps


  1. Heat Mushroom Lo Mein pouches in microwave for 30 seconds and pour into mixing bowl with chopped scallions and sliced mushrooms
  2. In sauté pan, heat olive oil. Pour in half of noodle mixture and flatten in sauté pan, like a pancake
  3. After 5-7 minutes or when noodles get crusty, add ½ of egg mixture
  4. When eggs become firm, flip the pancake to cook the other side. You may use a plate to cover sauté pan and flip pancake out onto plate then slide back into pan
  5. Cook the second side for 5-8 minutes, remove from pan, and serve with dipping sauce
