Mushroom Lo Mein Soup

Ingredients

  • 1 package Mushroom Lo Mein
  • 6-8oz. dry shiitake mushroom
  • 4 cups boiling hot water
  • 1 carrot diced
  • 1 celery stalk diced
  • 2 cloves of garlic minced
  • ¼ medium onion diced
  • 4 Cremini mushrooms sliced
  • 4 Trumpet mushrooms sliced
  • 1 cup vegetable broth
  • 1/3 cup soy sauce
  • 1 tbsp. sesame oil
  • 2 tbsp. of Mirin
  • Sliced Jalapenos
  • ½ cup snow peas
  • 2 tsp. fresh cracker pepper

Steps


  1. Bring 4+ cups of water to a boil; soak dried shiitake mushrooms in hot water for 20 minutes. Strain out mushrooms, saving all the liquid
  2. In a medium stockpot pour mushroom liquid and turn heat to medium. Add carrot, celery, onion, garlic, vegetable broth, soy sauce, mirin, cook for 15 minutes for flavors to develop
  3. Add Cremini and Trumpet mushrooms and snow peas, cook an additional 5-10 minutes
  4. Open heated Mushroom Lo Mein packet, split between 2 large soup bowls, and pour broth over noodles
  5. Garnish with green Jalapenos and serve
