Mushroom Masala Polenta

Ingredients

  • 2 packages Mushroom Masala
  • ½ bag of baby spinach
  • 1 cup of tofu
  • Olive oil
  • 1 log of sundried tomato polenta

Steps


  1. In a sauté pan, heat olive oil and sear 8 polenta slices until golden brown
  2. Remove polenta from heat and place on serving plate
  3. In the same sauté pan, slightly sear tofu cubes and add Mushroom Masala
  4. Once heated through, add baby spinach to wilt
  5. Pour the mixture over the polenta and serve
