Pumpkin Spice Rice Pudding

Ingredients

  • 1 package Jasmine Rice
  • 1 ½ cups reduced fat (2%) milk
  • 1/3 cup canned pumpkin
  • 3 tablespoons packed coconut palm sugar or light brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon dried ginger
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla extract

Steps


  1. Whisk the milk, pumpkin, sugar, cinnamon, ginger, nutmeg and vanilla together in a medium saucepan over medium heat until sugar is dissolved.
  2. Add the rice and bring to a boil.
  3. Reduce heat to a simmer and cook, stirring often, until rice is fluffy and pudding is creamy, 12-15 minutes.
  4. Spoon into bowls and garnish with extra cinnamon.
  5. Serve warm or chilled, alone or with whipped cream.
