Punjab Eggplant Pasta with Roasted Vegetables

Ingredients

  • 1 package Punjab Eggplant
  • 1/2 lb. of boiled pasta
  • 2 tbsp. olive oil
  • fresh basil
  • 1 zucchini
  • 1 yellow squash
  • 1 eggplant

Steps


  1. Boil pasta of choice and preheat oven to 400 degrees F
  2. Drain pasta and place back into pot
  3. Roast vegetables in oven for 20 minutes with olive oil, salt & pepper
  4. Mix roasted vegetables, Punjab Eggplant, and pasta in one bowl
  5. Top with fresh basil and serve
