Punjab Eggplant Wontons

Ingredients

  • 1 package Punjab Eggplant
  • 1 cup cream cheese
  • wontons wrappers
  • Egg wash
  • Olive oil
  • Black sesame seeds
  • ½ head chopped Romaine lettuce
  • Optional Mango salsa

Steps


  1. Heat Punjab Eggplant pouch for 30 seconds and empty pouch into mixing bowl. Add 1 cup cream cheese and mix until blended well
  2. Place 1 tbsp. of mixture into the center of the eggroll wrappers, wet the edges with egg wash to seal the wrapper, fold wrapper in half and pull the 2 ends together
  3. In a sauté pan, heat 5 tbsp. of cooking oil over medium heat. Gently place the filled wrappers 2-3 at a time in the oil. They will cook very quickly; turn over after 1-2 minutes to cook other side. Once both sides are lightly browned, remove and place on a paper towel to drain excess oil
  4. Serve cooked wontons on platter on a bed of chopped romaine and garnish with black sesame seeds and mango salsa
