Thai Lime Rice Stuffed Peppers

Ingredients

  • 1 package Thai Lime Rice
  • 1 cup broccoli florets
  • 1/2 cup diced onion
  • 1/2 diced red bell pepper
  • 1/2 cup steamed peas
  • 4 chopped trumpet mushrooms
  • 4 bell peppers
  • 1 cup of Parmesan cheese

Steps


  1. Slice off top of peppers, clean out seeds and place in a lined baking dish
  2. In a sauté pan over medium heat, add olive oil, heat, and then add onions, bell peppers, and sauté for 3-5 minutes. Add mushrooms, cook for additional 3-5 minutes, and then add peas, broccoli and rice.
  3. Preheat oven to 350 degrees F. Remove rice mixture from heat and toss in ¾ cup Parmesan cheese
  4. Fill the 4 peppers with the rice mixture place in baking dish and top with remaining cheese
  5. Bake in oven for 20 minutes and serve immediately
