Vegetable Korma Pot Pie

Ingredients

  • 2 packages Vegetable Korma
  • 1 tbsp. olive oil
  • 2 cubed sweet potatoes
  • 1 ear fresh corn
  • 1 cup peas
  • ½ cups pearl onions
  • piecrust

Steps


  1. Peel and cube 2 large sweet potatoes, coat with olive oil and salt & pepper, and roast at 400 degrees for 25 minutes
  2. Open 2 pouches of Vegetable Korma, add sweet potatoes, peas, onions and corn kernel (cut off cob), and mix together
  3. Fill oven-safe ramekins with mixture. Cover each ramekin with piecrust with a slit in top to vent
  4. Place ramekins in oven on a sheet pan and bake at 350 degrees F for approximately 25 minutes until crust is brown and flaky
  5. Serve immediately
