Recipe: Quick and Easy Indian-Spiced Buddha Bowl with Channa Masala Sauce

Ingredients:

  • 1 teaspoon olive oil
  • 1 cup cubed sweet potatoes
  • 1 cup chopped yellow peppers
  • 2 cups broccoli florets
  • 1 package Tasty Bite Organic Thai Lime Rice
  • 1 package Tasty Bite Channa Masala
  • juice of 1 lemon

Directions:

  1. Coat the bottom of a skillet with olive oil or vegetable spray. Add the chopped vegetables (broccoli, peppers, and sweet potatoes). Cook over medium-high heat until the vegetables are tender, about 7-10 minutes.
  2. Heat the Tasty Bite Organic Thai Lime Rice according to package directions.
  3. In the meantime, prepare the Channa Masala Sauce by pouring the contents from the package of Tasty Bite Channa Masala in a food processor. Add the lemon juice. Pulse until smooth.
  4. Place the rice in two bowls. Top each with sautéed vegetables.
  5. Drizzle with Channa Masala Sauce.
