Quick and Tasty Thanksgiving Sides

With the holidays just around the corner, every day feels like a mad dash to the grocery store. Thankfully, Tasty Bite makes the job a bit easier with a handful of delicious entrees and sides that cook up in a flash. The best part? They can be added to just about anything. Stuffing? Mashed Potatoes? Pilaf? Check. Check. Check. Take a gander at the recipes below for quick and delicious sides that will amp up your Thanksgiving meal and give you peace of mind. After all, there’s nothing like ōm for the holidays.

Holiday Butternut Squash

Prep Time: 20 min.

Serves: 4

Ingredients:

3 cups butternut squash, peeled and cut into 2” cubes

2 cups vegetable broth

2 Tbsp. olive oil

1 large onion, chopped

2 whole cloves

1 Granny Smith apple, peeled and diced

1 cup golden raisins

1 Tbsp. ginger

1 tsp. ground cinnamon

2 pouches Tasty Bite® Brown Rice & Lentils™

Directions:

  • BOIL squash and vegetable broth on high in sauce pan for 12 minutes (squash will be tender); remove from heat. Strain squash, reserve and set aside ¼ cup liquid.
  • HEAT oil over medium heat in large skillet; add onions, cloves, apples, raisins, ginger and cinnamon. Sauté for 5 minutes (onions will be translucent); remove cloves.
  • ADD squash, brown rice, and reserved liquid; heat for about 3 minutes or until warm.

TASTY CHANNA MASHED POTATOES

Prep time: 25 minutes

Serves: 4

Ingredients:

1 lb. potatoes, peeled

1 small onion, diced

1 tsp. chopped garlic

1/2 cup vegetabe stock

1 pouch Tasty Bite® Channa Masala

Salt and Pepper to taste

Directions:

  1. Cover potatoes with water and boil in medium sauce pan for 15 minutes or until tender. Strain and reserve.
  2. Heat oil in same pan on medium heat. Add onion and garlic. Sautee for 5 minutes.
  3. Add potatoes, vegetable stock and Tasty Bite® Channa Masala to pan and cook for 3 minutes.
  4. Remove from heat and mash ingredients together.
  5. Add salt and pepper to taste. Enjoy!
