Season’s Eatings: Quick Christmas Sides
When it comes to holiday treats and eats, you can’t go wrong with this tasty side dish. Orange Cranberry Pilaf hits so many of the right Christmas notes, you’ll think the carollers came early. With cranberry, sage and orange tucked into a bed of lentils and rice, it’s one way to jump-start the Christmas spirit on scent alone. Make this for your next seasonal soiree, and these warm flavors will thaw even the grinchiest of your bunch.
Orange – Cranberry Pilaf
Cook Time: 10 min.
Serves: 4
2 tbsp olive oil
1 large onion, diced
1 cup pecans, chopped and toasted
1 cup frozen peas
1 cup dried cranberries
1 orange, zested and juiced
1 tbsp. ginger, peeled and grated
2 pouches Tasty Bite® Brown Rice & Lentils™
HEAT oil over medium heat in a large skillet; add onions, pecans, peas, cranberries, orange zest and ginger. Sauté for 5 minutes, or until onions are translucent.
STIR in rice; continue to cook 2 minutes, until rice is hot.
ADD orange juice; heat an additional 3 minutes or until warm.
Tasty Spinach and Parmesan Stuffed Mushrooms Cook Time: 20 Minutes Serves: 4 4 large portobello mushrooms 1 pouch Tasty Bite® Kashmir Spinach™ 1 onion, diced 1/2 cup breadcrumbs 1 cup parmesan cheese
- PRE-HEAT oven to 350 degrees F2. REMOVE stems from portobella mushrooms.3. MIX Tasty Bite® Kashmir Spinach™, onion, bread crumbs and 1/2 cup parmesan cheese in large bowl. 4. STUFF mushroom caps with mix. 5. BAKE stuffed mushrooms on baking sheet for 10 minutes. Remove from oven. 6. TOP with remaining parmesan cheese and bake for an additional 5 minutes. Enjoy!
