Recipe: Quick and Easy Indian-Spiced Buddha Bowl with Channa Masala Sauce
Ingredients:
- 1 teaspoon olive oil
- 1 cup cubed sweet potatoes
- 1 cup chopped yellow peppers
- 2 cups broccoli florets
- 1 package Tasty Bite Organic Thai Lime Rice
- 1 package Tasty Bite Channa Masala
- juice of 1 lemon
Directions:
- Coat the bottom of a skillet with olive oil or vegetable spray. Add the chopped vegetables (broccoli, peppers, and sweet potatoes). Cook over medium-high heat until the vegetables are tender, about 7-10 minutes.
- Heat the Tasty Bite Organic Thai Lime Rice according to package directions.
- In the meantime, prepare the Channa Masala Sauce by pouring the contents from the package of Tasty Bite Channa Masala in a food processor. Add the lemon juice. Pulse until smooth.
- Place the rice in two bowls. Top each with sautéed vegetables.
