Method
- Using a medium pan, sautee the chopped onion with half the butter until golden and translucent.Â
- While the onion is cooking, heat the lentils and the rice according to bag instructions.Â
- Once onions are cooked, remove from the pan and place in a bowl. Set aside.
- Using the same pan, add the rest of the butter and scramble eggs. Season with salt and pepper.Â
- Assemble burritos using the rice, lentils, onion, eggs, cheese, and avocado.Â
