Breakfast Burrito Recipe with Madras Lentils

Ingredients

1 cup Tasty Bite Organic Madras Lentils
1 cup Tasty Bite Basmati Rice
1 onion, chopped
6 large eggs
8 flour tortillas
1 cup shredded cheddar cheese
1 sliced avocado
2 tbsp butter (for eggs);
Salt & pepper to taste

Method

  • Using a medium pan, sautee the chopped onion with half the butter until golden and translucent. 

  • While the onion is cooking, heat the lentils and the rice according to bag instructions. 

  • Once onions are cooked, remove from the pan and place in a bowl. Set aside.

  • Using the same pan, add the rest of the butter and scramble eggs. Season with salt and pepper. 

  • Assemble burritos using the rice, lentils, onion, eggs, cheese, and avocado.
