Tikka Masala Sliders

Ingredients

  • 1 ¾ lb chicken breast, raw
  • 1 13-oz jar Tasty Bite Tikka Masala Simmer Sauce

  • 1 bell pepper, trimmed and chopped

  • 2 12-packs Hawaiian rolls

  • 12 slices Monterey Jack cheese

  • 2 cups shredded mozzarella cheese

  • ½ cup pickled red onions

  • ½ cup pickled jalapeño slices

  • 3 tbsp unsalted butter

  • 2 cloves garlic, minced

  • 2 tsp cilantro, chopped

  • ¼ tsp garlic powder


Cilantro Mint Chutney:

  • 1 ½ cups cilantro leaves, packed

  • ¾ cup mint leaves, packed

  • ½ cup 2% plain Greek yogurt

  • 3 tbsp water

  • 2-3 Thai chilis

  • 2 cloves garlic

  • 2 tbsp lemon juice

  • 1 tbsp grated ginger

  • 1 tsp cumin

  • 1 tsp sugar

  • ½ tsp salt

Steps

  1. Add chopped bell pepper, chicken breast, and Tasty Bite Tikka Masala Simmer Sauce to a slow cooker, spreading the sauce to cover the chicken. Cook on low for 4-6 hours or until chicken is fall apart tender.
  2. Remove the chicken to a cutting board and shred, then return to the sauce and mix until evenly coated. Set aside.

  3. Pre-heat oven to 350°F and grease a 9x13” baking dish with butter. Set aside.

  4. Slice Hawaiian rolls in half and add the bottom half of the rolls to the greased baking dish. Layer slices of Monterey Jack cheese on top, then Tikka Masala pulled chicken, then pickled red onions and jalapeños, and finish with shredded mozzarella before adding the top half of the rolls.

  5. Melt 3 tbsp of butter and mix in minced garlic, cilantro, and garlic powder. Brush on top of rolls, then tent with foil. Bake for 15 mins, then remove foil and bake for 5 more minutes until the rolls are golden.
