Chickpea Tikka Masala Shakshuka
Ingredients
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- ½ a yellow onion, diced
- 1 bag Tasty Bite Chickpea Tikka Masala
- ½ cup canned tomato sauce
- 3-4 eggs
- Parsley and feta cheese, for topping.
Steps
- Heat the olive oil in a small skillet over medium heat.
- Add the pepper and onion and sauté for 5-7 minutes, until the onion is translucent.
- Stir in the Tasty Bite Chickpea Tikka Masala and tomato sauce and bring to a simmer.
- Once the mixture is simmering, create 3-4 wells and crack in the eggs.
- Cover the pan and let the eggs cook for 3-5 minutes.
- Top with feta cheese and parsley, and serve over Tasty Bite rice (I used their turmeric rice).
