A colorful, better-for-you spin on nachos. Roasted sweet potato rounds are topped with Tasty Bite Indian flavors, creamy avocado, and zesty toppings for a vibrant, nutrient-packed snack or meal.

Sweet Potato Nacho Platter with Tasty Bite Coconut Korma

Ingredients

1 Thinly sliced sweet potatoes
Diced tomatoes
Pickled red onions
Black olives
Sliced avocado
Tasty Bite Coconut Korma Sauce
Mexican four cheese blend
Chives, thinly chopped

Method

  1. Thinly slice sweet potatoes in rounds.
  2. Place sweet potato chips in an even layer across a baking sheet/dish, sprinkling with salt, pepper, & a drizzle of olive oil.
  3. Bake sweet potatoes for 15 minutes @ 450 degrees.
  4. Remove from oven, then top with cheese.
  5. Place back into the oven for ~5 minutes or until cheese is melted.
  6. Remove from oven, then load up with all the toppings!
  7. Garnish with avocado, chives, & dig in!
